Clos Du Cellier Aux Moines

The most beautiful place in the world, according to Charles Joblot. The appellation's greatest premier cru and undoubtedly one of Givry's finest terroirs. This climat covers 13.5 hectares, two of which we cultivate in the southwestern part. The clay-limestone terroir topped with brown soils produce wines that are deep, spicy and structured in texture with a fine grain, capable of defying time, particularly in great vintages. To reveal its full complexity, a few years in the cellar will naturally awaken the wine’s full aromatic range – nothing rushed, nothing forced.

Servoisine

On 2.5 hectares of gently sloping land, divided into three small plots, just next to Cellier aux Moines, we cultivate this other jewel of Givry with the utmost care. The slightly less stony clay-limestone soils tend to produce wines that are more austere when young but become remarkably energetic with a few years of aging. The livelier structure, compared with the Clos du Cellier, brings aromatic finesse and a clarity of flavour, making La Servoisine one of the most sought-after climats in Givry. Two terroirs so close yet so different, each revealing a unique personality in the bottle.

Les Bois Chevaux

In the heart of the Givry amphitheatre lies the smallest plot on the estate, 0.96 hectares watched over by the Madonna of the stubble fields. This plot rises 400 metres up a hillside ranging from 210 to 290 meters in altitude, where Pinot Fin was replanted using massal selection in 2003. On clear days, you can see Mont Blanc in the distance, adding a little more magic to this enchanting place. This unique location produces delicate, fresh wines with fine, silky tannins. A wine of unquestionable elegance.

Clos Marole

Overlooking the En Veau plot below and bordering Bois Chevaux to the north, where the hillside flattens out, Clos Marole is rooted in limestone on a 1.20-hectare plot planted in the early 1980s. Another great terroir in Givry, facing east, it produces wines that are full-bodied, juicy and powerful, with tannins that have a more earthy texture. The aromas are expressive: morello cherry, blackberry, liquorice. Like Les Bois Chevaux, Clos Marole is more approachable when young than Clos du Cellier aux Moines or Serovisine but will not lose its quality after a few years in the cellar.

Givry 1er Cru

En Veau

A 4.5-hectare plot facing south and east, surrounded by a magnificent grove full of hawthorn, wild roses, dogwood (among other flowers and shrubs) and home to three hives of happy bees. Near a natural spring, vines over forty years old (and some younger ones planted in 2011) grow on a south- facing slope. The result is a wine that’s bright, balanced and deeply mineral with a salty finish that reflects this unique terroir. A place that feels both wild and peaceful, and the wine carries that same duality.
